Oven ki Murgh...




Ingredients
For the sauce
* Tomato puree 2 tbsp
* Mustard sauce 1 tsp
* Lemon juice 1 tbsp
* Red chulli powder 1 tsp
* Zeera powder 1 tsp
* Turmeric powder 1 tsp
* Dhaniya powder 1 tsp
* Single cream 100 ml
* Salt

For the curry
* Chicken breasts 4
* Black pepper powder 1 tsp
* Vegetable oil 4 tbsp
* Whole garam masala 1 tbsp
* Onion 2 medium chopped in rings
* Ginger 1 inch, chopped in fine strips
* Garlic 5-6 cloves finely chopped
* Green chillies 2-3 finely chopped

Procedure:
Mix tomato puree, 2 tbsp water and other sauce ingredients into a sauce like consistency.
Marinate chicken with salt and pepper for 15-20 minutes
Heat oil, add whole garam masala, then add chicken breast in a single layer and fry them on both sides until light golden brown.
Remove chicken and place them in the baking dish
In the same oil which was used to fry chicken, add onion, ginger and green chillies and fry them for 3-4 minutes and spread them on the chicken evenly.
Now add garlic to the same oil and cook them till golden. Add sauce and cook till it heats up.
Pour this sauce over the chicken, make sure not to disturb the onion placement on it.
Cook in a pre-heated oven for 20-25 minutes.
Serve hot with naan/rice.

Ginger Chicken...


This is one of the most simple dishes and yet very delicious.

Ingredients:
* Chicken 500 gms
* Ginger paste 2 tbsp
* Lemon juice 2 tbsp
* Red chilli 1 tsp (ideally whole chillies but powder would be fine)
* Dhaniya 1 tbsp (ideally whole dhaniya but powder would be fine)
* Butter/Oil 2 tbsp

Procedure:
Blend together ginger, red chillies, dhaniya and lemon juice to a paste.
Marinate chicken pieces in the paste for 2-3 hours.
Heat butter/oil, add the chicken pieces and the marinate and cook on medium heat till oil seperates and chicken is tender.
Serve with paratha and rice.

Jahangiri Chicken...


This recipe was passed on to me by a friend of mine who got it from his fiancee. A very easy to make and delicious recipe.

Ingredients:
* Boneless Chicken 300 gms
* Chicken tikka masala 2 tbsp
* Green paste 1 tbsp
* Tomatoes 3 medium
* Yoghurt 1 cup
* Cream 2 tbsp
* Oil 4 tbsp

Procedure:
Marinate chicken pieces in yoghurt and tikka masala for an hour.
Heat oil add green paste and finely chopped tomatoes, cook till oil seperates.
Add marinated chicken and cook on medium heat till chicken is tender. It should take around 15 minutes.
Remove from heat and add cream.
Serve hot with roti/paratha/rice.

Pistachio Chicken...


Apologies for not updating the blog as often, but as many of you already know, we are expecting a new addition to our family. Officially the baby is expected on 14th January. Please keep us in your prayers.

Ingredients:
* Chicken 500 gms
* Onion 1 medium
* Pistachios 50 gms
* Yoghurt 3 tbsp
* Cream 2 tbsp
* Chilli flakes (crushed red chillies) 1 tbsp
* Garlic 4-5 cloves
* Oil

Procedure:
Heat oil, add garlich and finely chopped onion and cook on medium heat till light brown.
Add Chicken and chilli flakes and cook for another 10 minutes till chicken is tender.
Add yoghurt, one spoon at a time and keep stirring.
Boil pistachio for 2-3 minutes. Once cooled, mix them with cream and make a paste.
Add the paste to chicken and cook for another 5 minutes.
Serve hot with chapatis.

Dumm Aloo...

Ingredients:
* Baby potatoes 12-15
* Tomatoes 2 medium
* Yoghurt 1 cup
* Red chilli powder 1 tsp
* Dhaniya powder 2 tsp
* Turmeric 1/2 tsp
* Whole Garam masala 1 tbsp
* Tomato puree 2 tbsp
* Onion 1 medium
* Oil
* Salt

Procedure:
Peel potatoes, pierce them with a fork and fry them till they turn golden brown. Keep aside.
Heat oil, add whole garam masala, finely chopped onions. Fry them till light golden brown. Add finely chopped tomatoes, puree, all powder masala and cook till it turns into a gravy and oil seperates
Add potatoes and cover the pot and let it simmer for 15-20 minutes on low heat.
Serve hot with hot chappatis and zeera rice.

Chicken with gravy...

Ingredients:
* Onion 1 medium
* Tomatoes 2 medium
* Whole garam masala 1 tbsp
* Chicken 500 gms
* Chicken stock cube 1
* Red chilli powder 1 tsp
* Dhaniya powder 1 tsp
* Turmeric powder 1/2 tsp
* Kasoori methi 1 tbsp (dry methi leaves)
* Cream 2 tbsp
* Salt
* Oil

Procedure:
Boil onion with 1 cup water and chicken stock cube. Make a paste out of it.
Blend tomatoes into a paste.
Heat oil, add garam masala then add boiled onion paste. Cook till oil seperates.
Add tomatoe paste and all the powder masalas and cook for 4-5 minutes on medium heat.
Add chicken cook till chicken is tender.
Add cream, kasoori methi, salt and server hot with parathas/naan.

Nalli Gosht...

Ingredients:
* Nalli 2-3
* Onions 2 medium
* Tomatoes 2 medium
* Whole garam masala 1 tbsp
* Green Paste 1 tsp
* Red chili powder 1 tsp
* Dhaniya powder 2 tsp
* Salt
* Oil

Procedure:
Boil nalli with green paste and salt till tender.
Heat oil, add whole garam masala and finely chopped onions and fry till light golden.
Add chopped tomatoes and above powder masalas and cook till oil seperates.
Add boiled nalli and cook on low heat for around 15-20 minutes.
Garnish with chopped coriander leaves and serve hot with naan.

Hot and Spicy Chicken...

Fatee watched this recipe on a television cooking show. We tried it and it turned out wonderful.

Ingredients:
* Chicken 1 medium
* Yogurt 2 cups
* Chilli flakes 1 tbsp
* Dhaniya powder 1 tbsp
* Green chillies 4-5
* Red chillies 2-3
* Salt
* Oil
* Onion 1 medium
* Green paste 1 tsp

Procedure:
Marinate chicken in yogurt, half of powder masalas and green paste for 2-3 hours.
Fry onion and blend it into a paste, keep aside.
Heat oil, red chillies and then add the marinated chicken. Add the remaining half of the powder masalas and cook till chicken is tender.
Add finely chopped green chillies.
Add onion paste and cook for another 5-8 minutes on medium heat.

Chilli Paneer...

Ingredients:
* Paneer 200 gms
* Onion 1 medium
* Garlic 3-4 cloves
* Green chillies 2-3
* Tomatoes 2 medium
* Tomato ketchup 2 tbsp
* Maida 2 tbsp
* Red chilli powder 1 tsp
* Salt
* Oil

Procedure:
Chop onions in big chunks. Heat oil, fry onions till they are transparent.
Add finely chopped garlic.
Blend tomatoes into a paste and add it to onions. Add red chilli powder and salt. Cook for 5 minutes on medium heat. Keep stirring.
Make a thin paste of half a cup of water and maida. Add it to onion and tomatoes.
Cook for a couple of minutes till it becomes thick.
Add chunky paneer and green chillies. Cook for 5 minutes on low heat and serve hot.
If needed, you can fry the paneer before adding.
