Masala Dosa...


Dosa:
I used Gits ka dosa mix. Follow the directions on the pack.
The first two dosas will be totally useless, dont be disheartened.
Depending upon your taste, either cook the dosa for longer to make it crispy or medium for soft and fluffy.

Masala:
Ingredients:
* Boiled Aloo 2
* Onion 1 medium
* Green Chillis 3-4
* Mustard seeds
* Zeera
* Turmeric powder

Procedure:
Heat oil, add mustard seeds, zeera and green chillies.
Fry the chopped onion, once transparent, add turmeric powder and salt.
Add potatoes and cook for few minutes.

Serve with coconut and red-chilli chutney.

Advice on the first few dosas,the girdle can be conditioned .
Just take around 2 spoons of salt and a spoon of oil and move it around on the surface as the girdle is getting hot.do this for a few minutes after it is completely hot (keep the heat on high)
Once the salt starts to brown a bit,turn the heat down and remove the salt from the girdle.Clean with a paper cloth and splash some water and wipe clean.
