Rice stuffed Capsicum...

This is one very simple yet elegant and impressive dish to serve. You can use your imagination and stuff it with anything of your choice. You can mix leftover gravy with rice and use it as the stuffing. I used mixed vegetable pilau, i have already posted on the blog, as the stuffing.

Ingredients:
* Capsicum (aka shimla mirch or bell peppers) 2 medium
* Cooked rice for stuffing
* Cheese 1/2 cup grated.
* Oil 1 tsp
* Salt

Procedure:
Boil 1 litre water and add some salt to it. Cut the lid off the capsicum and empty it from inside. Add cut capsicum to the water and boil for 5 minutes.
Fill the boiled capsicum with rice and sprinkle grated cheese on top. Cover the capsicum with their lids.
Brush the capsicum with oil from outside.
Bake in a pre-heated oven for 6-8 minutes.
Serve hot with relish or coleslaw.
