Baingan Bharta...
Easy to make. My all time favourite.
Roasting the Baingan (Aubergine/Brinjal):
Pierce the baingan all over with the help of a fork.
Apply some vegetable oil over it.
Heat the tava, put the baingans on it and keep turning them to roast them all over.
Once done, cover it with some glass bowl for a couple of minute. This helps removing the skin easily.
Ingredients:
* 2 Roasted baingan
* 1 Onion
* 2 tomatoes
* 5-6 cloves Garlic
* 5-6 Green chilles
* 2 tb sp vegetable Oil
* 1 tb sp zeera
Procedure:
Heat the oil. Add zeera, garlic and green chillies.
Add chopped onions and cook till light golden.
Add tomatoes and cook for 10 minutes.
Add mashed roasted baingan.
Cook for 5 minutes and garnish with green corriander and spring onions.

I roast the eggplant using electric fry pan (350 degree) for 20 to 30 min. This method works very well for me.
