Sesame Chicken


Ingredients:
* Chicken breast 200gms
* Sesame seeds 2 tbsp
* Soya sauce 1 tbsp
* Chilli sauce 1 tsp
* White vinegar 1 tsp
* Ginger-garlic paste 1/2 tsp

Procedure:
Cut chicken into thin strips when it is half frozen and half thawed.
Marinate chicken in above sauces and pastes for half an hour.
Roll the marinated chicken pieces in sesame seeds.
Shallow fry on low heat for 15-20 mins or until light golden.
Serve with salad and crisps/fried samosa strips.

Oven ki Murgh...




Ingredients
For the sauce
* Tomato puree 2 tbsp
* Mustard sauce 1 tsp
* Lemon juice 1 tbsp
* Red chulli powder 1 tsp
* Zeera powder 1 tsp
* Turmeric powder 1 tsp
* Dhaniya powder 1 tsp
* Single cream 100 ml
* Salt

For the curry
* Chicken breasts 4
* Black pepper powder 1 tsp
* Vegetable oil 4 tbsp
* Whole garam masala 1 tbsp
* Onion 2 medium chopped in rings
* Ginger 1 inch, chopped in fine strips
* Garlic 5-6 cloves finely chopped
* Green chillies 2-3 finely chopped

Procedure:
Mix tomato puree, 2 tbsp water and other sauce ingredients into a sauce like consistency.
Marinate chicken with salt and pepper for 15-20 minutes
Heat oil, add whole garam masala, then add chicken breast in a single layer and fry them on both sides until light golden brown.
Remove chicken and place them in the baking dish
In the same oil which was used to fry chicken, add onion, ginger and green chillies and fry them for 3-4 minutes and spread them on the chicken evenly.
Now add garlic to the same oil and cook them till golden. Add sauce and cook till it heats up.
Pour this sauce over the chicken, make sure not to disturb the onion placement on it.
Cook in a pre-heated oven for 20-25 minutes.
Serve hot with naan/rice.

Paper Chicken...


Had this at one of Fatee's friends place. Loved it instantly.

Ingredients:
* Boneless chicken 250 gms
* Soya sauce 2 tbsp
* White pepper powder 1 tsp
* Seseme oil 2 tbsp
* Ginger-Garlic paste 1 tbsp
* Salt

Procedure:
Marinate bite size chicken pieces in above ingredients for a couple of hours.
Wrap individual pieces of marinated chicken in baking (butter) paper a tie them with threads.
Pre-heat oven at 180 degrees.
Cook the tied chicken for 15 minutes at 180 degrees.
Serve hot with ketchup.

Chicken Mayo Cutlets

Ingredients:
* Potatoes 250 gms
* Cheese 3-4 slices
* Chicken shredded 1/2 cup
* Mayonisse 3 tbsp
* Carrots 1/2 cup grated
* Noodles 1/2 cup boiled
* Black pepper 1 tsp
* Salt

* Egg 1
* Bread crumbs
* Oil for frying

Procedure:
Mix all the above ingredients together into a dough except eggs and bread crumbs.
Add bread crumbs if the dough is too runny.
Make cutlets of the dough and dip them in beaten egg.
Roll the egg wrapped cutlet in bread crumbs and deep fry them.
Serve hot with green chutney and tomato ketchup.

Ginger Chicken...


This is one of the most simple dishes and yet very delicious.

Ingredients:
* Chicken 500 gms
* Ginger paste 2 tbsp
* Lemon juice 2 tbsp
* Red chilli 1 tsp (ideally whole chillies but powder would be fine)
* Dhaniya 1 tbsp (ideally whole dhaniya but powder would be fine)
* Butter/Oil 2 tbsp

Procedure:
Blend together ginger, red chillies, dhaniya and lemon juice to a paste.
Marinate chicken pieces in the paste for 2-3 hours.
Heat butter/oil, add the chicken pieces and the marinate and cook on medium heat till oil seperates and chicken is tender.
Serve with paratha and rice.

Chicken Chow Mein...


Ingredients:
* Egg noodles 1 packets
* Carrot 2 medium
* Bean sprouts 1/2 cup
* Cabbage 1/2 medium
* Spring onions 4-5
* Boneless chicken 250 gms cut in small cubes
* Soya sauce 1 tbsp
* Egg 1
* Cornflour 2 tbsp
* Salt
* Oil
* White pepper powder 1 tsp
* Green chillies 2-3
* Ginger 1/2 inch (julian cut)

Procedure:
Marinate chicken in egg, cornflour, salt and white pepper powder for half an hour.
Boil noodles.
Julian cut carrot, cabbage and spring onions.
Heat oil, add chopped ginger and fry for a while.
Add chicken along with the marinde and fry till tender.
Add mixed vegetables, bean sprouts, soya sauce, salt and white pepper. Stir fry.
Add the boiled noodles to the stir fry vegetables and chicken. Cook for a couple of minutes.
Serve with soup.

Jahangiri Chicken...


This recipe was passed on to me by a friend of mine who got it from his fiancee. A very easy to make and delicious recipe.

Ingredients:
* Boneless Chicken 300 gms
* Chicken tikka masala 2 tbsp
* Green paste 1 tbsp
* Tomatoes 3 medium
* Yoghurt 1 cup
* Cream 2 tbsp
* Oil 4 tbsp

Procedure:
Marinate chicken pieces in yoghurt and tikka masala for an hour.
Heat oil add green paste and finely chopped tomatoes, cook till oil seperates.
Add marinated chicken and cook on medium heat till chicken is tender. It should take around 15 minutes.
Remove from heat and add cream.
Serve hot with roti/paratha/rice.

Pistachio Chicken...


Apologies for not updating the blog as often, but as many of you already know, we are expecting a new addition to our family. Officially the baby is expected on 14th January. Please keep us in your prayers.

Ingredients:
* Chicken 500 gms
* Onion 1 medium
* Pistachios 50 gms
* Yoghurt 3 tbsp
* Cream 2 tbsp
* Chilli flakes (crushed red chillies) 1 tbsp
* Garlic 4-5 cloves
* Oil

Procedure:
Heat oil, add garlich and finely chopped onion and cook on medium heat till light brown.
Add Chicken and chilli flakes and cook for another 10 minutes till chicken is tender.
Add yoghurt, one spoon at a time and keep stirring.
Boil pistachio for 2-3 minutes. Once cooled, mix them with cream and make a paste.
Add the paste to chicken and cook for another 5 minutes.
Serve hot with chapatis.

Chicken Tikka with Hot n Tangy Sauce...

Ingredients:
* Chicken 1/2 (cut in 2)
* Tikka masala 2 tsp
* Lemon juice 2 tbsp
* Green paste 1 tbsp

* Tomatoes 2 medium
* Ketchup 1/4 cup
* Garlic 3-4 cloves
* Chaat masala 1 tsp
* Oil

Procedure:
Marinate chicken pieces in tikka masala, lemon juice and green paste for 2-3 hours.
Grill the chicken till they are cooked and tender.
Heat oil, add finely chopped garlic and cook till it turns golden brown. Cook the finely chopped tomatoes till it feels like a paste. Add ketchup and chaat masala. Add salt n pepper as per your taste.
Serve chicken hot and sizzling tikkas topped with hot and tangy sauce.

Chicken Tikka Biryani...

Fatee made this from the recipe shown on one of the tele programs.

Ingredients:

- For marination:
* Chicken 500 gms
* Yoghurt 2 tbsp
* Green paste 1 tbsp
* Tikka masala powder 2 tbsp
* Fried onion (crushed) 1 tbsp
* Crushed red chillies 1 tsp
* Lemon juice 1 tbsp
* Oil 2 tbsp
- For gravy:
* Oil 4 tbsp
* Onion 1 medium
* Tomato 1 medium
* Red chilli powder 1 tsp
* Yoghurt 4 tbsp
- For Rice:
* Rice 500 gm
* Elaichi 1
* Zeera 1 tsp
* Clove 4-5

Procedure:
Mix the marination ingredients into a paste and marinate the chicken for 2-3 hours.
Once marinated, cook the whole marinated mixture with chicken on a tava for 10-12 minutes.

For gravy, heat oil. Add finely chopped onions. When golden brown, add chopped tomatoes and cook till thick gravy. Add powder masalas, salt and yoghurt. Cook till the oil seperates. Now add the chicken tikka pieces and cook for 4-5 minutes on medium heat.

Boil rice with elaichi, zeera, salt and cloves. Dont cook them completely. When they are 80% done, drain the water and add the rice on top of the chicken gravy. Cover the lid and cook on very low heat for 15-20 minutes.

Chicken with gravy...

Ingredients:
* Onion 1 medium
* Tomatoes 2 medium
* Whole garam masala 1 tbsp
* Chicken 500 gms
* Chicken stock cube 1
* Red chilli powder 1 tsp
* Dhaniya powder 1 tsp
* Turmeric powder 1/2 tsp
* Kasoori methi 1 tbsp (dry methi leaves)
* Cream 2 tbsp
* Salt
* Oil

Procedure:
Boil onion with 1 cup water and chicken stock cube. Make a paste out of it.
Blend tomatoes into a paste.
Heat oil, add garam masala then add boiled onion paste. Cook till oil seperates.
Add tomatoe paste and all the powder masalas and cook for 4-5 minutes on medium heat.
Add chicken cook till chicken is tender.
Add cream, kasoori methi, salt and server hot with parathas/naan.

Hot and Spicy Chicken...

Fatee watched this recipe on a television cooking show. We tried it and it turned out wonderful.

Ingredients:
* Chicken 1 medium
* Yogurt 2 cups
* Chilli flakes 1 tbsp
* Dhaniya powder 1 tbsp
* Green chillies 4-5
* Red chillies 2-3
* Salt
* Oil
* Onion 1 medium
* Green paste 1 tsp

Procedure:
Marinate chicken in yogurt, half of powder masalas and green paste for 2-3 hours.
Fry onion and blend it into a paste, keep aside.
Heat oil, red chillies and then add the marinated chicken. Add the remaining half of the powder masalas and cook till chicken is tender.
Add finely chopped green chillies.
Add onion paste and cook for another 5-8 minutes on medium heat.

Chicken Bharta...


This recipe is very much like baingan ka bharta but for the non-vegetarians. My younger brother made this for us today.

Ingredients:
* Chicken breasts 2
* Spring onions 6-8
* Green chillies 4-5
* Ginger garlic paste 1 tbsp
* Red chilli flakes 1 tsp
* Green coriander leaves
* Salt
* Oil

Procedure:
BBQ the chicken breasts, if not bbq, put them in the oven and grill them to almost cooked.
Chop them into small cubes.
Heat oil. saute spring onions for a couple of minutes. Add ginger garlic paste and paste o 3 green chillies and cook for couple more minutes. Add 2 whole green chillies and red chilli flakes and chopped chicken.
Cook for 6-8 minutes. Add chopped coriander leaves and serve hot with parthas.
